CHICKEN SALAD WITH VEGETABLES
Ingredients
  • 1 chicken breast
  • 1 zucchini
  • 1 small can of mushrooms sliced
  • Some broccoli leaves
  • Soy sauce
Preparation
  • Wash the vegetables well and cut the zucchini into slices and the broccoli into pieces.
  • Place everything in a bowl with the mushrooms. Add two tablespoons of water and lid with clear film. Make a couple of holes in the paper and put the source in the oven at a maximum power of 5 minutes.
  • In that time, grill the chicken breast. Then cut it and add it to the source of the vegetables.
  • Finally, sprinkle a splash of soy sauce. Mix well and ready to serve.
SALMON AND VEGGIES
Ingredients
  • 1 cup sliced zucchini
  • 1 cup broccoli
  • 1/2 cup cherry tomatoes
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 tablespoon olive oil
  • 2 Salmon fillets
Preparation
  • First, pre-heat oven to 375°F
  • Combine the vegetables in a large sheet pan and season them with salt, pepper, and olive oil. Place the fillets next to the veggies and bake for about 18-20 minutes (Ensure that the salmon is cooked and the veggies are tender)
SALMON AND AVOCADO TARTAR
Ingredients
  • Slices of smoked salmon
  • 1 tomato
  • 1 avocado
  • Olive oil
  • Soy sauce
  • Wasabi
Preparation
Prepare the dressing by mixing oil, soy sauce and a sprig of wasabi. Although if you like spice you can add a little more.
Peel the tomato and cut it into small cubes. If possible, remove the seeds.
Dice the salmon and avocado
Mix all the pieces with the seasoning and you are ready to eat. You can serve the tartar after putting it in a round mold to give it shape.
TURKEY TORTILLA ROLLS
Ingredients
  • 8 ounces of cream cheese (softened)
  • 1/4 cup of whole berry cranberry sauce
  • 8 (10-inch) flour tortillas
  • 1/2 head of lettuce (shredded)
  • 16 slices deli turkey
  • 16 slices Havarti or Swiss cheese (halved)
  • 2 medium tomatoes (halved and sliced)
Preparation
  • Mix your cream cheese with cranberry sauce very well in a small bowl
  • A tortilla should be laid flat on a cutting board; then spread a thick layer of cream cheese all the way to the edges. Fix about 3 lettuce leaves down the middle of the tortilla.
  • Put 2  slices of turkey and 4 pieces of Swiss cheese on top of the lettuce. Top it up with several sliced tomatoes.
  • Roll tightly towards the filling, until everything is tightly wrapped and the cream cheese holds the rollup together.
  • Do the exact same thing to the remaining tortillas until all have been assembled. Now, wrap each tortilla roll up tightly in plastic wrap.
  • Let the rollups cool a little. When serving, you can trim any unfilled ends away. Then slice each tortilla into equal pieces.

STUFFED AVOCADOS
Ingredients
  • Avocados
  • Tomatoes
  • Onions
  • Cheese
  • Parsley
  • Olive oil and vinegar
  • Salt and pepper
  • Oregano
Instructions
  • With a spoon, we empty the avocados and keep their skin, which will serve as a base to present the dish.
  • Chop the avocado, the feta cheese, the tomatoes, the onions and the parsley to small pieces. We season it with a little olive oil and vinegar, salt, pepper and a little oregano -fresh or dehydrated-.
  • Finally, fill the skins of the avocado with the mixture.
